My Layered Lunch






I'll call this my Layered Lunch!

It fills me right up and provides that power charge I need to hit the afternoon with energy.

You see, by the time books are read, a song is sung and prayers are said,
my toddler's nap time usually makes mommy sleepy too. 

But, this layered lunch works wonders!

It kicks me in the cutie-putootie-wootie
and gets me moving through the afternoon - even after snuggling with 
a warm, sweet smelling, cuddly little girl.

So how to layer up one of these bad boys for lucky you?

Take one unsalted rice cake and smear on roasted red pepper hummus.
(This was my first attempt at homemade from scratch hummus. A little thick, but not bad! I also used sun dried tomatoes instead of roasted red peppers with this batch.)

Add cheese, shredded or sliced, and microwave for 15 to 20 seconds, or until melted.
(The fridge had sliced muenster today, but has also offered regular and sharp cheddar.)

Top with avocado slices.

  1. I found you via The Tablescaper. My sister Reba and I love dishes so I went to the post on ppl organizing theirs which led me here. I like your lunch idea. I am not sure it would be enough for me though. I need to retrain myself to graze all day long instead of having a lot at one meal. I may try this idea out.
